Awesome Pancakes and homemade syrup

Awesome Pancakes
2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups buttermilk (You can also sub just short of 2 cups milk and 1 1/2 T. vinegar)
1/4 cup and 2 T. milk
2 eggs
2-3 T. butter, melted

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
Heat a lightly buttered griddle or frying pan over medium heat.
Pour the wet mixture into the dry mixture. Stir until it's just blended together. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

Quick syrup

2 cups white sugar
1/2 cup brown sugar
1 cup water
1 teaspoon maple flavored extract
1 teaspoon vanilla extract

In a saucepan, combine the white sugar, brown sugar and water. Bring to a boil, and cook for about 4 minutes. Stir in the maple extract and vanilla, and remove form the heat. Let cool, and serve at room temperature. Store in a sealed container in the refrigerator. Stores well for a few weeks.

Loaded Baked Potato Soup

I conjured up this recipe while craving baked potatoes....usually I do not like potato soup, but this one blows that out of the water.

Loaded Baked Potato Soup

Preheat oven to 350.

Scrub and fork 6 large baking potatoes (I used therestaurant size ones). Bake for 45-60 minutes or until fork is easily inserted.

Meanwhile gather the following:

½ lb. bacon

1 medium white onion (chop)

1 T. Chicken or beef bouillon (I use the jarred Better ThanBouillon brand)

5T. flour (more or less to achieve roux)

2 C. milk

1 C half and half or heavy cream

4 oz. cream cheese softened

Water or milk if you prefer a thinner consistency.

Pepper to taste (the bacon grease usually makes it saltyenough)

Shredded cheese for topping

Fry the bacon as you normally would and place on a papertowel, set aside and chop up bacon to be used later as a topping.

To the bacon grease on medium heat add the chopped onion andcook until the onion becomes softened and translucent. To that mix add enoughflour to absorb the grease and cook, stirring, for 1-2 minutes.

Add bouillon, stir and then slowly add 2 C. milk it shouldlook like gravy-ish. (make sure toscrape the bottom of the pot, I used a 7 qt dutch oven.)

At this time peel thebaked potatoes and add in chunks (you can break down the potatoes to your sizeliking with cooking utensil as youcontinue to stir.

Once all of the potatoes are added add the cream/half andhalf and the cream cheese….cook on low until the cream cheese melts. If toothick at this time you can add water or more milk. Taste and season.

Serve with Bacon, cheese, sour cream, green onions astoppings. (I just put bacon in microwave to reheat. I served this so it wasquite thick, like a chowder, as opposed to a soup/stew.)

"Legendary" Muffins

These muffins are.....wait for it.....LEGENDARY!

Emma has no clue that there is "punkin" or "cupin" in them.

Pumpkin Chocolate Chip Muffins a.k.a. "Legendary" Muffins

1 2/3 C. flour
1 C. Sugar
1 T pumpkin pie spice
1 tsp baking soda
1/4 t. baking powder
1/4 t. salt

2 eggs
1 C. pumpkin
1/2 C. butter melted
3/4 C. mini chocolate chips (if they aren't mini, they aren't legendary)
1/2 C. nuts (optional, or in my house sadly a no)

Bake 20-25 min. at 350 degrees.

After watching a Diners, Drive-ins, and Dives episode I wanted to try a new version of "flappers" as the lady called them. I looked through several recipes and made up my own version. This is the closest I have gotten to re-producing Farmhouse Pancakes!

2 C. warm milk (like pee your pants warm, not hot)
1 packet of rapid rise yeast
1 tsp. salt
1 T. sugar

Whisk and add, 2 T. melted butter and one whisked egg

In a sifter over the bowl dump 2 C. AP flour and 1 T. baking powder.
Sift into wet items and whisk away.

Let the bowl sit for 15-30 minutes, my fabulous helper was anxious to get started, so we were on the shorter time frame ;)

We heated the skillet to 6 and put a ladle-full in we watched until all of the bubbles were going on the top and then we FLIPPED IT (Emma's version of excitement).

Jake will probably never even look at this to find that we found his beloved recipe and ate several of them this morning. To bad so sad :)

This has to be one of my favorite photos from our Mommy and Me trip to Valentine this year. We walked around a pasture, drank out of a windmill, rode a horse, explored a barn, rode on several tractors, and hiked to Fort Falls.

Sooo.....we were going to head down to Texas for Labor day weekend. My dad was taking Emma down a few days early and we were following after work on Thursday. That's where the planning endith.
Tuesday:
Emma and my dad started heading down to Texas on the way she was not keeping fluid/food down, so they got to the state line of Oklahoma and dad stopped for the evening and see if she was just getting carsick(she has never been carsick). She was up that whole night asking him for water and then not keeping it down so the next morning I told him to take her to the closest hospital in Blackwell, Oklahoma(thank you google). Ben and I QUICKLY left Omaha and headed that way(to Blackwell OK). They ran tests...put a NG tube in her nose and determined that she would need to be transported to Wichita to a hospital to have a scope to see why she was not able to hold down anything. We met them in Witchita (her, the ambulance, and my dad) and waited another 36 hours or so of Emma not getting anything by mouth...
Thursday:
that evening we found out that she 1)had part of her stomach and intestine in her CHEST CAVITY and 2) they wanted to cut her open in less than 2 hours. (we saw this on the x-ray/scan)
So Emma has emergency abdominal surgery to "fix" a herniated diaphragm......the surgeon said 2 hours...(thank you Kim for translating surgeon time for us) 2 hours and 45 minutes later she comes out and states that the diaphragm was not herniated it was completely detached on the left side of her body, so it took longer than thought to stitch the diaphragm to her bottom rib.
Friday: PICU
Saturday: PICU
Sunday: Pediatric floor
Monday: checkout after lunch!

Then a week...week and a half later Sadie the dog breaks her toe (they think) Emma and I take her in to the vet and it's infected, and smelly, and both of her ears are infected. So I'm at the vet in a small room, with those smells, the vet, 2 vet techs, and...... Emma is screaming because 1)she is scared of anyone in a white coat now and 2) she did not want the vet touching her or Sadie-lady as she calls her.....

Luckily both are mended because I don't think I could have taken anymore.

A BIG, HUGE, and HEARTFELT thank you to...

Grammpa Griffiths- because he had to first deal with the puke in his peekup, he had to take Emma to the first hospital and be there with her during the tests, he had to deal with me on the phone and had to follow the ambulance. Because he stayed with us in Wichita and helped out with the hotel, gave us breaks, made sure we ate, and helped with the medical professionals when we were just to tired to listen anymore. He had no idea that the start of his vacation would turn into something much, much different.

Gramma and Grampa Larson- because you drove down and helped us with the hospital rotations, you got her a tiara and pretties. Thank you for canceling other plans and helping us with Emma the rest of the weekend.

David Cooper- because you emailed and asked if we needed anything and did exactly what we needed you to do and that was to start prayer chains and send down your wonderful spouse.

Kim Cooper- because you drove down....at the exact time I/we would need you. You told me the good, the bad, and prepped me for things that would have never crossed my mind...ever. You knew what it was like to be in my shoes and showed me how to get through :)

Jamie-Thank you for letting me call and vent....thank you for sending Emma gifts...both before surgery and when we got home :)

Kristen-Thank you for the wonderfully soft and cuddly Elephant...it arrived while we were in the PICU. Perfect timing.

Nana and Papa Ray- Thank you for coming to Omaha and spending several days cooking, cleaning, laundry, and watching Emma so that we could try to get back on schedule.

I know the nurses and doctors will never read this but most of them were awesome....from the doctor who first thought that she heard stomach noises in Emma's chest to our wonderful PICU nurse who got us a quieter room and let us stay a bit longer, they made our "experience" more manageable.

So....August was good. Mommy went back to work (part-time of course), Gracie (Emma's bestie) started coming over every other day, Emma got her big-girl bed, and she got her own peppa shaker and a harley tie-dyed shirt.

Soooo....in mid-July after we got home from the 4th of July and had a patio door catastrophe(shattered glass door=evil new neighbors in the back?), Mimi came to visit. Mimi has come 2 years in a row now for about a week each time to get her some quality time with Emma. Who is Mimi???? Mimi is Jamie, my cousin from Texas. I'm pretty sure Emma is her fave....I'd bet money, all my Coach purses' and a bag of Pretzel M&M's on it.
The week was spent going to the zoo, making/decorating cookies and cupcakes for Emma's birthday and....the birthday itself.At the zoo, the child has no fear of most of the animals.....with exception to some monkeys. She is kissing one of the many goats in the "petting zoo" area at the zoo.

In one week we will be celebrating Emma's 2nd birthday....but first a busy week ahead. We are going to try to get in the zoo, cookies made, find a place to play in the wawwey(pool). Mimi will be here in a day and a half and Emma is excited to see her as well as Klausy, Mancock, and Manna later this week. I almost feel bad that her fun week will be ended by shots on Monday :(

A quick trip to the zoo the other day.....telling the goat to NOT eat her shoes....they nibbled on the stroller enough.
Her ability to accessorize....very impressive!
and again....so cute!
Chasing the polar bear back and forth trying to show him her little bunny :) This is where a couple of (*%&#) people said that she looked like a snack for the bear....KMA people! (No animals or people were harmed during the trip to the zoo :) )

This weekend Sass decided that she needed to use the facilities. She stated her intentions and toddled to the toliet. Once there she lifted the lid and start to drop trou. She sat and tried....bless her heart...after a bit she said off and she was gone. She has done it a few more times since then so perhaps this week we will go pick out a little potty! No high hopes here at all...it will just be easier for her as the toliet is to tall.

We celebrated Daddee's birthday at La Mesa Friday...Emma ate pretty much all of the guacamole, then tipped the cup to see if she could get more out! We bundled her in hunter's layers and went outside Saturday to play in the snow. We built a snowman and threw snowballs. We don't have her sled here but she went down a large hill on her hiney. Pictures from this weekend will be up later today.

New words...and the 8th tooth!

This weeks number was 8 for the 8th tooth....Sassy is a slow teether and that's fine by me. Now she is even top and bottom.....such an orderly fashion for teeth :)
The color for this week...and one of the top favorites in fruits is orange....so precious to hear her say it to....
And the 2nd new word this week...teeth, sometimes said correctly and sometimes it's teef.

We saw the goldfish as you can see! We traveled to Kearney this weekend to visit Grampa and Grama Larson. Grampa and Gramma Harms stopped by to see us Sunday. Emma played the piano, rode on her tricycle, and ran wild with Klaus.
On a different note, let us hope that Emma's pronounciation of the word "sock" will not prevent her from entering any educational establishiments....heck, any establishment for that matter. If your wondering what the problem is just think...what do you use to seal sinks and tubs??? :)

No, no cake for the occasion, just a few french fries at McDonald's.

She was 35 3/4 inches tall and weighed 29 lbs....yes off the charts. She also decided this week that her shoes are getting to small and takes them off to stretch her piggies out. Mommy now gets to order another pair so she has a few to chose from. I saw a sneak peak of the spring/summer squeaky shoes (click for link) and I'm so excited!!!! Sandals and flips!!! We will wait until it gets warmer though.

Hello all!
I looked up the word resolution on Webster to see if it should be a resolution or a goal to update regularly. I've decided that it will be my GOAL to update at least every week. I'm sure some will hold me to that.

Since I've last updated:
Emma spent a lovely Thanksgiving at G&G Larson's house where she had all the trimmings and green onions. She particularly LOVED the Cranberry Salad. Click HERE for recipe. Minus the spirits of course.
In December we had several snow days that left Emma and mommy at home for multiple days at a time...not able to go bye bye.
First away from home experience was also in December. Uncle Jake picked Emma up and drove her up to Grampa Griffiths' house. We were right behind a day early though as if we did not head out it would have been a Sassy-less Christmas here in Omaha for us. Once we got up there we had no power half of the time and Emma decided to cut a tooth and get a fever. It was a Christmas we won't forget for quite sometime.....as a side note: we did eat quite well during all of this.
For New Year's we headed down to Arizona to Aunt Kristen's house. We spent many warmer days down there seeing sights and did I mention being warmer? Emma did quite well on the plane ride and she even got her own seat on the way back....such a deal!!!
This first week of the new year has been spent indoors there have been 3 snowdays in a row due to snow and the bone chilling cold.

We headed to the dr. last week because we had a very un-sassy like day and did not want to eat....just wanted to throw food and pitch a fit. One check up later one ear was infected.....problem solved and Sassy got grape tongue depressors as a departing gift.
Grandparents have been here the past 2 weekends so Sassy has been kept quite busy giving kisses and what not!
She can say What's that, Who's that, hi kitty, hi puppy, Whee (when mommy drives daddy's car :)),
getcha-getcha-getcha, pees, and Baa (bath), and E-I-E-I (no "o").
She can open her door, and help Sadie out of her kennel.

15 month check up!

Emma can now:
walk, albeit it's a bit like after a night out.
waves (the princess wave from Princess Diaries)
remembers the other little 1 year old at daycare and gives her kisses!
Can say puppy, dada, mama, kitty, and a few other words.
likes Lima beans...in fact she will pretty much devour any food...
Favorite foods for the moment: mook, peach yougurt, CHEESE, goldfish crackers, fresh tomatoes, and any fruit

We opted for some take out from Hy-Vee because feeding Emma at any place other than home is a full time job....as in you don't get to eat! She had some lo mein, chicken and mushroom, and some teriyaki chicken (which I think may be Japanese). So far there is not much she won't eat. She also had her very first Toll House Cookie that daddy made. She eats regular people food and LOVES her mook and cheese!

Grampa steals Sassy's Food

I have learned that
1) Young babies/infants do not understand the concept of sharing yet. (Duh! Grampa)
2)Sassy will emit a ear-piercing scream if you try to take away her bottle or crackers/"cheerios".
3)because Grampa Griffiths tried yesterday to steal Sassy's food, today at lunch as soon as I gave her the cheesy duck crackers she immediately covered them all with her hands...looked around, and started to shove those puppies into her mouth as quickly as possible.

Hello!

The past few weeks has been busy!

I see that the birthday poll is at a tie...I guess the theme will be a surprise until her birthday then! It will be one of those listed though.
Emma and I have been garage sale-ing(some lady told me Emma looked like a infant in a 2 year old's body), played in her new little pool, went to the eye doctor to clear up her eye and played with some of her new toys.
Yesterday we practiced using a fork with our lunch and worked on our walking skills. As per daddy's request, a video from yesterday!

This was her 3rd time through...the first time she went even farther!

I was looking at the this blog and exactly a year ago was sassy's shower. It was a awesome baby shower, the best I've been to. I had said I would put up pictures from that day and I noted today that I never got any from some of the people that attened. So a year later..sorry, I still to this day have no photos.

Yes, I know you are all (all 5 of you or so) are waiting for new and fabulous pictures of Sassy. I can assure you that there will be some very soon.
The hungry little girl ate 2 jars of cereal/fruit this morning with her usual handful of organic "cheerios". You should see her little eyes light up when that box comes out of the cabinet and I shake it...Pavlov's dog move over!
We then play...today it was what happens when you tip your sippy cup upside down...you get some wet drawers! We read some books (her FAVORITE is Peek a Who....must be finding me some more by that author for her) and then she plunked down with her wooby for a nap. We may hit up Costco today....we'll see. I did a lot of golfing yesterday and parred a hole with a "Happy Gilmore" off the tee box, followed by a "Sammy Sosa/Babe Ruth on the fareway. It was awesome.

Sassy got a playhouse today. I was heading home from Costco when I saw a lady a block and a half away from our house put a cardboard sign by this on her curb. I (being genetically predisposed for this) turn around and checked it out. It was for sale so I asked how much....35 dollars later it was delivered to our driveway!!! I know she can't use it just yet, but how could one turn this sort of a deal down. Now she has a small potting shed and this playhouse. Hmmm, maybe she needs a whole "neighborhood" in the back yard. ;)

Two Teeth!!!...and 2 long days ahead

They have left. Ben and Sassy are heading over for 2 long days ahead to help my dad/grammpa with his shoulder surgery in the am(It sure must stink gettin old). They(the 2 younger ones) will be back Saturday or Sunday....leaving me with some free time! Sassy is up to 2 teeth now, the bottom ones. Maybe her and grammpa can gum on some soft foods together! :)
