Uncle Jake's Pancakes


After watching a Diners, Drive-ins, and Dives episode I wanted to try a new version of "flappers" as the lady called them. I looked through several recipes and made up my own version. This is the closest I have gotten to re-producing Farmhouse Pancakes!

2 C. warm milk (like pee your pants warm, not hot)
1 packet of rapid rise yeast
1 tsp. salt
1 T. sugar

Whisk and add, 2 T. melted butter and one whisked egg

In a sifter over the bowl dump 2 C. AP flour and 1 T. baking powder.
Sift into wet items and whisk away.

Let the bowl sit for 15-30 minutes, my fabulous helper was anxious to get started, so we were on the shorter time frame ;)

We heated the skillet to 6 and put a ladle-full in we watched until all of the bubbles were going on the top and then we FLIPPED IT (Emma's version of excitement).

Jake will probably never even look at this to find that we found his beloved recipe and ate several of them this morning. To bad so sad :)

You're right to bad too sad! He would probably like them - and he likes to cook too! I can see Emma getting a little impatient to get going.. the sooner it cooks, the sooner she eats!
